Why chefs designed it this way
Four prototypes. 231 chefs surveyed on the first build. 171 on the second. 20 phone interviews. 5 in-person week-long tests in working kitchens. The features that earned their slot: business card holder, top-flap pockets, multi-size knife sleeves, small-tool inserts. The features that didn't: a chef reference chart that 97% of survey respondents approved, but that in-person testers felt patronized by. We pulled it.

How many knives does it hold? Seven main knives plus three to four smaller tools. Sized for the 6 to 8 knives most professional chefs travel with: chef, slicer, boning, paring, bread, fillet, santoku.
What's it made of? Full-grain American leather from S.B. Foot Tannery, the Red Wing-owned tannery whose leather is in their $400+ heritage boots. Solid brass hardware. Hand-stitched and embossed in Norwood, Massachusetts.
How heavy is it? About 2.5 pounds empty. The weight is intentional. Full-grain leather lasts a career. Thinner leather doesn't.
How do I care for it? Wipe down with a dry microfiber cloth after each use. Apply leather conditioner every 6 to 12 months. The leather will darken and patina with use. That's the design intent.
How long until it ships? Lead time is 2 weeks, first come first serve. Each roll is handcrafted to order. We send build updates along the way.
What if something goes wrong? Send it back. We'll repair it. The Heritage Roll is built to last a career, and we stand behind every roll Glenn makes.
